raw. Chive & tomato soup with coconut & avocado

About the Recipe

Lots of flavours in this soup and it has a sweet chilli bite to it too

Ingredients

Soup


Thumb of ginger

2 cloves of garlic

2 lemons (Juice of)

1 grapefruit (Juice of)

2 spring onions

1/2 cup of fresh chopped chives

handful of fresh

coriander

7 small sized vine ripened tomatoes

2 dates


Garnish


1/2 avocado

1 coconut (flesh of)

1/ cup of fresh chopped continental parsley

1 tablespoon of chives

Preparation

Step 1 Place into a blender all the ingredients for the soup, and blend until smooth.


Step 2 Put approx. half the blend into a serving bowl.


Step 3 Gently place half an avocado (no with skin) into the bowl with the flesh of a coconut.


Step 4 Sprinkle with fresh continental parsley & chives.


Chef's Tips


  • This will make enough for 2 bowls of the soup.
